Where is the carrot in the recipe?

Hi Karen…so sorry, I realize I have forgotten the carrits…the most important ingredient. I added 2 meduim(or 1large) carrots, peeled an grated, to the mixture. Mix all the ingredients together lighly, so as to keep the cupcake light qnd fluffy.
